Baking with Mrs Bouw: The Ultimate Energy Bar!

Last night I was scrolling through my Facebook feed when a link to some of Lorna Jane's Move Nourish Believe recipes popped up. I'll be honest, whilst I am always willing to give healthy recipes a go, I am also rather skeptical as so many of the sugar free/ IQS recipes I have tried over the last few years taste like absolute rubbish. And I refuse to pretend that it taste good just because it is better for me.  Having said that, I am all for substituting the bad for the good especially if it is something my whole family can enjoy and benefit from! So, when I read through the ingredients for these 'Ultimate MNB Energy Bars' and knew I already had them all in the pantry, I jumped at the chance to give them a go. Plus, being pregnant for the third time my energy levels have been lagging and I the docs confirmed during my last blood test results that I am actually suffering from anaemia... so I can use all the extra energy I can get! And just like it states on the Move Nourish Believe website 'This healthy energy bar recipe will be your saving grace when you're in need of a 3:30pm pick-me up or mid morning energy boost.' So all in all, thumbs up from me! :)

The Ultimate Energy Bar!

Ingredients

1 cup almonds
1 cup rolled oats
1 cup dried cranberries
5 medjool dates (or 6-7 regular dates)
1/2 cup cacao powder
2 tbs boiling water

Method

- Place almonds and oats in a food processor and blend until a coarse crumb.

- Add cacao powder, cranberries and dates and blend again.

- While blending, add the boiling water, slowly, until the mixture becomes well incorporated
and forms a ball.

- Press the dough into a lined slice tin and place in the fridge for 2 hours before slicing into bars.

- Enjoy!
